About Me

My name is Danielle and I am Coo Coo for Choux, choux pastry that is and let's be honest...all things sweet!  For those of you who don't know, choux pastry (aka pâte à choux) consists generally of just four simple ingredients: butter, water, flour and eggs.   It is with these simple ingredients that tasty treats like profiteroles, eclairs, beignets and even Mexian churros are made. Besides the fact that choux pastry is unbelievably delicious filled with vanilla pastry cream...what I love most is that even with the simplest of ingredients the possibilities are endless.  I guess I kind of think of myself like choux pastry...a simple girl who is capable of wonderful things.

I am a full time Paralegal at an Estate Planning firm and one-time law school student who has finally decided to follow my heart and my passion for the sweeter things in life by becoming a pastry chef. I know, how different can those two professions be, but the transition from law student to pastry student was a smooth one thanks to my husband who is also my quality control manager (aka taste tester).

Like most people who love to bake, I fell in love with it at a very young age while sitting on the kitchen counter watching my mom create all kinds of different and yummy sweets.  The heavenly smells that came out of the kitchen were magic and to this day, those moments with her are some of my fondest memories.

I plan to write as often as possible about my baking experiences as well as other things that interest me like my obsession with really good cookbooks and recipes that I have found to be tried and true. So for those of you that have found your way to my blog I want to welcome you and thank you for taking a peek.
